    Soak the Beans

    Rinse the red beans under cold water. Place them in a large bowl and cover with water. Let them soak overnight or for at least 8 hours.

    Dice the onion, green bell pepper, and celery into small pieces. Mince the garlic cloves.

    Prepare the Tasso

    Cut the tasso ham into small cubes or strips.

Cooking

    Cook the Vegetables

    In a large pot, heat a splash of oil over medium heat. Add the diced onion, green bell pepper, and celery. Sauté for about 5 minutes until they begin to soften.

    Stir in the minced garlic and cubed tasso ham. Cook for another 2-3 minutes until the garlic is fragrant.
