Turkey Preparation

Prepare the Turkey
Remove the turkey from the packaging and pat it dry with paper towels to ensure crispy skin.

Season the Turkey
In a small bowl, mix together salt, black pepper, garlic powder, onion powder, and paprika. Rub this seasoning mix all over the turkey, including under the skin and inside the cavity.
Smoking Process

Prepare the Smoker
Soak the pecan wood chips in water for at least 30 minutes before smoking. Preheat the smoker to 225°F (107°C).

Add Wood Chips
Once the smoker is ready, add the soaked pecan wood chips to the smoker box.

Smoke the Turkey
Place the seasoned turkey on the smoker grates. Smoke for approximately 2-3 hours, or until the internal temperature reaches 165°F (74°C).

Rest the Turkey
Once the turkey reaches the desired temperature, remove it from the smoker and let it rest for at least 20-30 minutes before carving.
