Soak Wood Chips
In a bowl, combine the pecan wood chips with water and let them soak for at least 30 minutes. This will allow the chips to produce smoke when heated.

Season the Pork Chops
Pat the center cut pork chops dry with paper towels. Season both sides of each chop with salt, black pepper, garlic powder, and onion powder, ensuring an even coating.

Smoke the Pork Chops
Place the seasoned pork chops on the grill grates away from the direct heat source. Close the lid and smoke the chops for about 1 to 1.5 hours, or until they reach an internal temperature of 145°F (63°C).

Rest and Serve
Once the pork chops have reached the desired temperature, remove them from the smoker and let them rest for about 5–10 minutes before serving. This helps retain the juices.
