Method

Preparation

  1. 1

    Prepare the Pecans

Preheat your oven to 350°F (175°C). Spread the pecans on a baking sheet and toast them in the oven for about 8-10 minutes until they are fragrant and lightly browned. Remove from the oven and let cool.

  2. 2

    Combine the Sugars and Cream

In a medium saucepan, combine the granulated sugar, brown sugar, and heavy cream. Stir the mixture over medium heat until the sugars have dissolved.

Cooking

  1. 3

    Cook the Mixture

Increase the heat to medium-high and bring the mixture to a boil. Allow it to boil without stirring for about 5 minutes, or until it reaches the soft-ball stage (approximately 240°F or 115°C on a candy thermometer).

  2. 4

    Add Flavorings and Pecans

Remove the saucepan from heat and stir in the vanilla extract and a pinch of salt. Then fold in the toasted pecans until they are evenly coated with the mixture.

Forming the Pralines

  1. 5

    Shape the Pralines

Using a spoon or a small cookie scoop, drop spoonfuls of the pecan mixture onto a parchment-lined baking sheet. Allow them to cool at room temperature until set, about 30 minutes.
