    Prepare the Ingredients

    Dice the chicken breast, chop the onion, bell pepper, celery, and green onions. Mince the garlic and set aside.

    Gather Spices

    Measure out Cajun seasoning, salt, black pepper, and paprika. Set aside for later use.

Cooking

    Sauté the Vegetables

    In a large pot or Dutch oven, heat the olive oil over medium heat. Add the chopped onion, bell pepper, and celery. Cook until softened, about 5 minutes.

    Add Garlic and Chicken

    Stir in the minced garlic and diced chicken breast. Cook for another 5-7 minutes, until the chicken is no longer pink.

    Incorporate Sausage and Spices

    Add the sliced Andouille sausage, Cajun seasoning, salt, black pepper, and paprika to the pot. Stir well to combine.

    Add Rice and Liquids

    Stir in the long-grain white rice, diced tomatoes, and chicken broth. Add the bay leaves. Bring the mixture to a boil.

    Simmer

    Once boiling, reduce the heat to low, cover, and let simmer for 20-25 minutes, or until the rice is cooked and the liquid is absorbed.

    Add Shrimp

    In the last 5 minutes of cooking, add the peeled and deveined shrimp. Stir and cover until the shrimp are pink and cooked through.

    Finish and Serve

    Remove bay leaves, stir in chopped green onions, and serve hot. Enjoy your hearty jambalaya!
