Fried Fish & Shrimp

Prepare the Batter
In a large mixing bowl, combine flour, cornstarch, baking powder, salt, black pepper, and paprika. Gradually add cold water, whisking until smooth and free of lumps.

Heat the Oil
In a deep skillet or frying pan, heat 2 cups of oil over medium-high heat until hot but not smoking.

Fry the Fish
Dredge the fish fillets in the batter, allowing excess to drip off. Carefully place them in the hot oil and fry for about 4-5 minutes on each side, or until golden brown and cooked through. Remove and drain on paper towels.

Fry the Shrimp
Dredge the shrimp in the batter and fry in the same oil for about 2-3 minutes, or until they are golden brown and float to the surface. Remove and drain on paper towels.

Prepare the Potatoes
Peel the russet potatoes and cut them into thin strips to create fries.

Heat Oil
In another deep skillet or frying pan, heat 2 cups of oil over medium-high heat.

Fry the Potatoes
Once the oil is hot, carefully add the potato strips in batches, frying for about 5-7 minutes until they are crispy and golden. Remove and drain on paper towels, then sprinkle with salt.

Prepare the Coleslaw
If using store-bought coleslaw, simply place in a serving bowl. If making from scratch, combine shredded cabbage, carrots, and dressing of choice in a bowl and mix well.

Prepare the Tartar Sauce
In a small bowl, mix together tartar sauce ingredients (if making from scratch) or serve pre-made tartar sauce.
