Preparing the Turkey

If you choose to brine the turkey, combine water and salt in a large container until dissolved. Submerge the turkey in the brine for at least 4 hours or overnight in the refrigerator.

After brining, remove the turkey from the brine, rinse it under cold water, and pat it dry with paper towels.

Rub the entire surface of the turkey with the Cajun spice blend, ensuring to get under the skin for maximum flavor.
Frying the Turkey

Heat the Oil
In a large deep fryer or a large pot, heat vegetable oil to 350°F (175°C). Use a thermometer to ensure the oil reaches the correct temperature.

Fry the Turkey
Carefully lower the seasoned turkey into the hot oil using a turkey frying basket or a sturdy rack. Fry for about 3-4 minutes per pound, approximately 36-56 minutes total for a 12-14 lb turkey. Monitor the temperature to keep it steady at 350°F.

Use a meat thermometer to check the thickest part of the turkey's thigh. It should read at least 165°F (74°C) to ensure it is fully cooked.
