Combine Ingredients
In a large mixing bowl, combine the crawfish tails, breadcrumbs, chopped green onions, mayo, beaten egg, minced garlic, Cajun seasoning, salt, and black pepper. Mix well until all ingredients are evenly incorporated.

Cover the mixture with plastic wrap and refrigerate for at least 30 minutes. This will help the mixture firm up and make it easier to form into cakes.

After chilling, take the mixture out of the refrigerator. With your hands, form the mixture into small patties, about 2 inches in diameter and 1/2 inch thick.

In a large skillet, heat the vegetable oil over medium heat. Ensure the oil is hot enough by testing with a small piece of the mixture; it should sizzle when added.
