Pie Crust

    Make the Dough

    Gradually add ice water, one tablespoon at a time, mixing until the dough holds together. Form the dough into a ball, wrap in plastic wrap, and refrigerate for at least 30 minutes.

    Roll Out the Dough

    Preheat your oven to 375°F (190°C). On a floured surface, roll out the chilled dough into a circle about 12 inches in diameter. Transfer the dough to a 9-inch pie pan, pressing it into the bottom and sides. Trim any excess dough.

    Bake the Crust

    Cover the crust with parchment paper and fill with pie weights or dried beans. Bake for 15 minutes, then remove the weights and parchment and bake for an additional 10 minutes or until golden brown. Let cool completely.

Chocolate Filling

    Combine Dry Ingredients

    In a medium saucepan, whisk together granulated sugar, unsweetened cocoa powder, cornstarch, and salt until well combined.

    Add Milk and Heat

    Slowly add milk to the dry ingredients, whisking continuously to avoid lumps. Place the saucepan over medium heat and cook, stirring constantly, until the mixture thickens and begins to boil.

    Add Egg Yolks

    In a separate bowl, beat the egg yolks. Once the mixture in the saucepan is boiling, remove it from the heat. Slowly whisk about a cup of the hot mixture into the egg yolks to temper them, then whisk the egg yolk mixture back into the saucepan.

    Finish the Filling

    Return the saucepan to low heat and cook for another 2-3 minutes, stirring constantly until thickened. Remove from heat and stir in unsalted butter and vanilla extract until melted and smooth. Pour the filling into the cooled pie crust.

    Whip the Cream

    In a large mixing bowl, combine heavy cream, powdered sugar, and vanilla extract. Using an electric mixer, whip the cream on medium speed until soft peaks form.

    Top the Pie

    Once the chocolate filling has set (about 2 hours in the refrigerator), spread the whipped cream evenly over the top of the pie. Optionally, you can garnish with chocolate shavings or cocoa powder.
