    Prepare the Ingredients

    Gather all the ingredients and chop the vegetables as needed. Dice the chicken breast, slice the sausage, and peel and devein the shrimp.

    Sauté the Proteins

    In a large pot or Dutch oven, heat the olive oil over medium heat. Add the diced chicken and sliced sausage. Cook for about 5-7 minutes until the chicken is browned and the sausage is heated through.

    Add Vegetables

    Next, add the chopped onion, green bell pepper, celery, and minced garlic to the pot. Sauté for an additional 5 minutes until the vegetables are softened.

    Combine the Ingredients

    Stir in the diced tomatoes, Cajun seasoning, salt, black pepper, and bay leaves. Mix well to combine all ingredients.

    Add Rice and Broth

    Add the long-grain rice and chicken broth to the pot. Stir to ensure the rice is evenly distributed.

    Cook the Jambalaya

    Bring the mixture to a boil, then reduce the heat to low. Cover the pot and let it simmer for about 20 minutes, or until the rice is cooked and has absorbed most of the liquid.

    Add Shrimp

    After 20 minutes, add the peeled and deveined shrimp to the pot. Stir gently and cover again. Cook for an additional 5-7 minutes until the shrimp are pink and cooked through.

    Finish and Serve

    Remove the bay leaves and stir in the chopped green onions. Serve hot and enjoy your Cajun Jambalaya!
