Prepare the Boudin Mixture
In a large mixing bowl, combine the boudin sausage (removed from its casing), cooked white rice, chopped green onions, chopped parsley, beaten eggs, salt, black pepper, and cayenne pepper. Mix well until all ingredients are fully incorporated.

Form the Boudin Balls
Using your hands, take a small amount of the mixture and roll it into a ball about the size of a golf ball. Repeat until all the mixture is used, placing the balls on a baking sheet lined with parchment paper.

Heat the Oil
In a deep pot or fryer, heat the vegetable oil over medium heat until it reaches 350°F (175°C).

Fry the Boudin Balls
Carefully add the boudin balls to the hot oil in batches, being careful not to overcrowd the pot. Fry for 3-4 minutes or until golden brown and cooked through. Remove with a slotted spoon and drain on paper towels.

Mix the Remoulade
In a bowl, combine mayonnaise, Dijon mustard, Worcestershire sauce, hot sauce, garlic powder, paprika, lemon juice, salt, and black pepper. Whisk until smooth and well combined.

Serve the fried boudin balls hot with a generous side of remoulade for dipping.
