In a small bowl, combine the paprika, cayenne pepper, garlic powder, onion powder, dried thyme, dried oregano, black pepper, and salt. Mix well until all the spices are evenly combined.

Prepare the Catfish
Rinse the catfish fillets under cold water and pat them dry with paper towels. This helps the seasoning adhere better.

Season the Fillets
Generously rub the blackening seasoning mixture onto both sides of each catfish fillet, ensuring they are coated evenly.

Cook the Catfish
Carefully place the seasoned catfish fillets in the hot skillet. Cook for about 4-5 minutes on each side, or until the fish is blackened and cooked through. The internal temperature should reach 145°F (63°C).
