Preparation of Beef

    Slice the Beef

    Trim any excess fat from the beef and slice it into thin strips, about 1/8 to 1/4 inch thick, against the grain. This will help create a tender jerky.

    Marinate the Beef

    In a large bowl, combine soy sauce, Worcestershire sauce, brown sugar, garlic powder, onion powder, black pepper, cayenne pepper, red pepper flakes, and liquid smoke (if using). Mix well. Add the sliced beef to the marinade, ensuring all pieces are coated. Cover and refrigerate for at least 6 hours or overnight for best flavor.

Drying the Jerky

    Preheat the Dehydrator or Oven

    If using a dehydrator, preheat it to 160°F (70°C). If using an oven, preheat it to the lowest setting, typically around 160-170°F (70-75°C).

    Arrange the Beef Strips

    Remove the beef from the marinade and pat it dry with paper towels to remove excess moisture. Arrange the strips in a single layer on the dehydrator trays or a baking sheet lined with parchment paper.

    Dry the Jerky

    In the dehydrator, dry for about 4-6 hours until the jerky is dry but still slightly flexible. In the oven, dry for 4-8 hours, checking periodically. The jerky is done when it bends without breaking.

    Once dried, let the jerky cool completely. Store in an airtight container or vacuum-sealed bag. Properly stored jerky can last for several weeks at room temperature or up to a few months in the freezer.
