Method

Cooking the Pasta

  1. 1

    Boil the Water

In a large pot, bring a generous amount of salted water to a boil.

  2. 2

    Cook the Pasta

Add the pasta to the boiling water and cook according to package instructions until al dente. Drain and set aside.

Preparing the Vegetables

  1. 3

    Chop the Vegetables

While the pasta is cooking, chop the bell peppers, zucchini, and carrots into bite-sized pieces. Halve the cherry tomatoes.

  2. 4

    Sauté the Vegetables

In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for 1-2 minutes until fragrant.

  3. 5

    Add Vegetables

Add the chopped bell peppers, zucchini, carrots, and cherry tomatoes to the skillet. Cook for about 5-7 minutes, stirring occasionally until softened.

  4. 6

    Add Spinach

Stir in the fresh spinach and cook for an additional 2-3 minutes until wilted.

    Mix Pasta and Veggies

Add the cooked pasta to the skillet with the sautéed vegetables. Toss to combine thoroughly.

  2. 8
