Panna Cotta Base

Prepare Gelatin
In a small bowl, sprinkle the gelatin powder over the cold water. Let it sit for about 5-10 minutes until it becomes spongy.

Heat Cream Mixture
In a saucepan, combine the heavy cream, whole milk, and granulated sugar. Cook over medium heat, stirring occasionally until the mixture is warm and the sugar has dissolved, but do not let it boil.

Add Vanilla and Gelatin
Remove the saucepan from the heat. Stir in the vanilla extract and the softened gelatin mixture until fully dissolved.

Pour into Molds
Pour the panna cotta mixture into individual serving cups or molds. Allow them to cool at room temperature for about 30 minutes.

Chill
Cover the cups with plastic wrap and refrigerate for at least 4 hours or overnight until set.
Mixed Berry Topping

Prepare Berries
In a medium bowl, combine the mixed berries, granulated sugar, and lemon juice. Toss gently to coat the berries.

Let Marinate
Allow the berry mixture to sit at room temperature for about 15-20 minutes to release their juices.
Serving

Serve
Once the panna cotta has set, remove it from the refrigerator. Top each panna cotta with a generous spoonful of the mixed berry topping. Serve chilled.
