Dough Preparation

Activate the Yeast
In a small bowl, combine the warm water, sugar, and active dry yeast. Stir gently and let it sit for about 5-10 minutes until it becomes frothy.

Mix the Dough
In a large mixing bowl, combine the all-purpose flour and salt. Make a well in the center and pour in the activated yeast mixture and olive oil. Mix until a dough forms.

Knead the Dough
Transfer the dough to a floured surface and knead for about 8-10 minutes until smooth and elastic.

Let the Dough Rise
Place the kneaded dough in a lightly oiled bowl, cover with a damp cloth, and let it rise in a warm place for 1-2 hours, or until doubled in size.
Assembling the Pizza

Preheat the Oven
Preheat your oven to the highest setting (around 475°F or 245°C) and place a pizza stone or baking sheet inside to heat.

Prepare the Toppings
While the dough is rising, slice the fresh mozzarella cheese and tomatoes. Set aside.

Shape the Dough
Once the dough has risen, punch it down and transfer it to a floured surface. Divide it into two equal portions. Roll out one portion into a 12-inch circle.

Add Toppings
Transfer the rolled-out dough to a piece of parchment paper. Drizzle with olive oil, then layer the sliced mozzarella and tomatoes evenly over the surface. Sprinkle with salt and black pepper to taste.

Bake the Pizza
Carefully slide the pizza (on the parchment) onto the preheated pizza stone or baking sheet. Bake for 10-12 minutes or until the crust is golden brown and the cheese is bubbling.

Garnish and Serve
Remove the pizza from the oven, and top with fresh basil leaves. Allow it to cool for a couple of minutes, then slice and serve.
