Make the Dough
In a large mixing bowl, combine the all-purpose flour and salt. Make a well in the center and crack the eggs into the well. Add olive oil. Using a fork, beat the eggs and gradually incorporate the flour until the mixture forms a rough dough.

Knead the Dough
Transfer the dough to a floured surface and knead for about 8-10 minutes until smooth and elastic. Wrap in plastic wrap and let rest for at least 30 minutes.

Prepare the Filling
In a bowl, mix the cooked lobster meat, mascarpone cheese, ricotta cheese, lemon zest, salt, and black pepper until well combined. Set aside.

Add Cream
Pour in the heavy cream and bring to a gentle simmer. Season with salt and black pepper to taste. Cook for about 5-7 minutes until the sauce thickens slightly. Remove from heat.
Lemon Pangrattato

Prepare the Pangrattato
In a skillet, heat the olive oil over medium heat. Add breadcrumbs and toast until golden brown, stirring frequently for about 5-7 minutes. Stir in lemon zest, chopped parsley, and salt to taste. Remove from heat.
Assemble and Cook

Roll and Cut Pasta
Divide the rested dough into four pieces. Roll out each piece into thin sheets using a pasta machine or rolling pin. Cut into squares or circles, about 3-4 inches wide.

Fill and Seal Tortellini
Place a teaspoon of filling in the center of each square. Fold over to form a triangle and press the edges to seal. Bring the two corners of the triangle together and press to form a tortellini shape. Repeat with remaining dough and filling.

Cook Tortellini
Bring a large pot of salted water to a boil. Cook the tortellini in batches for about 3-4 minutes or until they float to the surface. Remove and drain.

Serve
Plate the tortellini, drizzle with lobster brandy cream sauce, and sprinkle with lemon pangrattato on top. Serve immediately.
