Brown the Meat
Add the ground beef and pork to the pan. Cook until browned, breaking the meat apart with a spatula, about 10 minutes.

Add Wine and Tomatoes
Pour in the red wine, allowing it to simmer for about 2 minutes. Then add the crushed canned tomatoes, salt, black pepper, oregano, and basil. Stir well.

Simmer
Reduce the heat to low, cover the pan, and let the sauce simmer for at least 30 minutes, stirring occasionally.

Add Milk
Gradually add the milk while whisking to avoid lumps. Continue stirring until the sauce thickens, about 5-7 minutes.

Season
Add a pinch of nutmeg and salt to taste. Remove from heat and set aside.

Preheat Oven
Preheat your oven to 180°C (350°F).

Layer the Lasagna
In a baking dish, spread a layer of Bolognese sauce on the bottom. Place 3 lasagna noodles on top, followed by a layer of ricotta, a layer of béchamel, and a sprinkle of mozzarella. Repeat the layers until all ingredients are used, finishing with béchamel and mozzarella on top.

Add Cheeses
Sprinkle the grated Grana Padano and Pecorino Romano cheeses over the top layer of mozzarella.

Bake
Cover the baking dish with aluminum foil and bake for 30 minutes. Then remove the foil and bake for an additional 15-20 minutes, until the top is golden and bubbling.

Cool and Serve
Allow the lasagna to cool for 10 minutes before slicing and serving.
