Preparing the Base

    Combine Ingredients

    In a medium saucepan, combine the whole milk, heavy cream, and granulated sugar. Stir over medium heat until the sugar is dissolved, but do not let the mixture boil.

    Whisk Egg Yolks

    In a separate bowl, whisk together the egg yolks until they are pale and slightly thickened.

    Temper the Egg Yolks

    Slowly pour about a cup of the hot milk mixture into the egg yolks while whisking constantly to temper them. This prevents the eggs from scrambling. Then, pour the egg yolk mixture back into the saucepan with the rest of the milk mixture.

    Cook the Mixture

    Continue to cook the mixture over medium heat, stirring constantly, until it thickens enough to coat the back of a spoon. This should take about 5-10 minutes. Remove from heat and stir in the vanilla extract.

    Cool the Base

    Transfer the mixture to a bowl, cover with plastic wrap, and chill in the refrigerator for at least 4 hours or overnight.

Flavoring and Churning

    Add Flavoring

    Once the base is chilled, divide it into your desired portions for flavoring. If making fruit-flavored gelato, fold in the fresh fruit puree. For chocolate gelato, mix in the melted chocolate, and for Nutella flavor, add the Nutella.

    Churn the Gelato

    Pour the flavored base into an ice cream maker and churn according to the manufacturer's instructions until it achieves a soft-serve consistency.

    Freeze the Gelato

    Transfer the gelato to an airtight container and freeze for at least 2 hours to harden before serving.
