Preparing the Crispy Smashed Potatoes

Boil the Potatoes
In a large pot, add the baby potatoes and cover them with water. Bring to a boil and cook for about 15-20 minutes, or until they are fork-tender.

Season and Bake
Preheat your oven to 220°C (425°F). Place the smashed potatoes on a baking sheet, drizzle with olive oil, and season with salt, black pepper, and fresh rosemary. Bake for 20-25 minutes, or until golden and crispy.

Prepare the Cheese Fonduta
In a small saucepan over low heat, combine the taleggio and fontina cheeses. Stir continuously until the cheeses are melted and smooth. If the mixture is too thick, you can add a splash of milk to reach your desired consistency.

Assemble the Croque Nonna
On each slice of toasted bread, layer a slice of cotto ham and pour a generous amount of the melted cheese fonduta over the top. Carefully place a sunny side up egg on top of each sandwich.

Serve the Croque Nonna immediately with crispy smashed potatoes on the side.
