Rice Preparation

    Cook the Arborio Rice

    In a medium saucepan, melt the butter over medium heat. Add the chopped onion and minced garlic, cooking until the onion is translucent, about 3-4 minutes. Stir in the Arborio rice and cook for another 2 minutes. Gradually add the vegetable broth, one cup at a time, stirring frequently until the rice is al dente and creamy. Season with salt, pepper, and chopped basil. Remove from heat and let cool.

Cheese Filling

    Prepare the Cheese Filling

    Once the rice has cooled, mix in the cubed Fontina, mozzarella, asiago, and pecorino Romano cheeses until well combined. Set aside.

Forming Arancini

    Shape the Arancini

    Using your hands, take a handful of the rice mixture and flatten it into a disc. Place a tablespoon of the cheese filling in the center and fold the rice over to enclose the filling. Roll it into a ball. Repeat until all mixture is used.

Coating

    Coat the Arancini

    Set up a breading station with flour, beaten eggs, and breadcrumbs in separate bowls. Roll each arancini ball in flour, then dip it in the beaten eggs, and finally coat it with breadcrumbs. Ensure they are fully coated.

Frying

    Fry the Arancini

    In a deep frying pan, heat oil over medium heat until it reaches 350°F (175°C). Fry the arancini in batches until golden brown and crispy, about 3-4 minutes per side. Remove and drain on paper towels.

Asiago Cream Sauce

    Make Asiago Cream Sauce

    In a small saucepan, heat the heavy cream over medium heat. Stir in the asiago cheese until melted and smooth. Season with salt and pepper to taste. Keep warm.

Basil Oil

    Prepare Basil Oil

    In a blender, combine the fresh basil leaves and olive oil. Blend until smooth. Season with salt to taste. Strain if desired.

Serving

    Serve the Arancini

    Place the fried arancini on a serving platter. Drizzle with asiago cream sauce and basil oil for a delicious finish.
