Method
Prepare the Burger Patty
- 1
Mix Ingredients
In a mixing bowl, combine the American wagyu beef, salt, and black pepper. Gently mix the ingredients together until just combined. Avoid overworking the meat to keep the patty tender.
- 2
Form Patties
Divide the mixture into two equal portions and form each into a patty, about 3/4 inch thick. Use your thumb to make a small indentation in the center of each patty to prevent it from puffing up while cooking.
Cook the Bacon

Cook the Burger
- 4
Sear First Side
In the same skillet used for the bacon, increase the heat to medium-high. Add the burger patties and cook for about 4-5 minutes on one side until a nice crust forms.
- 5
Cook Second Side
Flip the patties and place a slice of American cheese on each. Cook for an additional 3-4 minutes for medium-rare, or until desired doneness is reached.
Assemble the Burger
- 6
Toast Bun
While the burgers are cooking, lightly toast the brioche bun in a separate pan or in the oven until golden brown.
- 7
Layer Ingredients
Spread mayonnaise on the bottom half of the toasted brioche bun. Place the lettuce leaf on top, followed by the cooked burger patty with cheese, the crispy bacon, and the red onion slices.
- 8
Complete Assembly
Top with the other half of the brioche bun and serve immediately.
