    Prepare the Dough

    In a small bowl, dissolve the yeast and sugar in warm water. Let it sit for about 5 minutes until frothy. In a large bowl, mix flour and salt, then add the yeast mixture. Knead the dough for about 5-7 minutes until smooth. Cover and let it rise in a warm place for about 1 hour or until doubled in size.

    Shape the Twists

    Preheat the oven to 450°F (232°C). Once the dough has risen, divide it into 8 equal pieces. Roll each piece into a long rope (about 24 inches), then twist into a pretzel shape. Place on a parchment-lined baking sheet.

    Boil the Pretzels

    In a large pot, bring 10 cups of water to a boil and add baking soda. Carefully drop each pretzel into the boiling water for about 30 seconds, then remove and place back on the baking sheet. Sprinkle with coarse sea salt.

    Bake

    Bake the pretzels in the preheated oven for about 12-15 minutes or until golden brown. Remove from the oven and let cool slightly.

    Serve warm with a mustard dip.
