Prepare the Ingredients

Wash and chop the vegetables (bell peppers, onions, spinach, and mushrooms) and set aside.

Whisk the Eggs

In a mixing bowl, whisk together the eggs, milk, salt, and black pepper until well combined and frothy.

Cook the Vegetables

In a large non-stick skillet, melt the butter over medium heat. Add the diced onions, bell peppers, and mushrooms, and sauté until they are soft, about 3-4 minutes. Add the spinach and cook for another minute until wilted.

Add the Eggs

Pour the egg mixture over the sautéed vegetables in the skillet. Gently lift the edges of the omelet with a spatula to allow uncooked eggs to flow underneath.

Add Cheese

Once the omelet begins to set, sprinkle the shredded cheddar cheese on top. Continue cooking until the eggs are fully set and the cheese is melted, about 3-5 minutes.

Fold and Serve

Carefully fold the omelet in half and slide it onto a plate. Serve immediately, garnished with additional vegetables or herbs if desired.
