    Prepare the Chicken

    Slice the chicken breast into thin strips and set aside.

    Chop the Vegetables

    Clean and slice the mushrooms, chop the tomatoes into wedges, and chop the scallions into small pieces. Rinse the cilantro and set aside.

    Prepare Aromatics

    Smash the lemongrass stalks slightly to release their flavor. Slice the galangal into thin pieces.

Cooking

    Combine Soup Base Ingredients

    In a large pot, combine the coconut milk and chicken broth. Add the smashed lemongrass, galangal slices, kaffir lime leaves, and bird's eye chilis. Bring to a gentle simmer over medium heat.

    Add Chicken

    Once the soup base is simmering, add the sliced chicken breast. Cook for about 5-7 minutes until the chicken is cooked through.

    Add Vegetables

    Stir in the sliced mushrooms and tomato wedges. Continue to simmer for an additional 5 minutes until the mushrooms are tender.

    Season the Soup

    Add fish sauce and lime juice to the soup. Adjust seasoning to your taste.

    Finish with Scallions and Cilantro

    Just before serving, stir in the chopped scallions and cilantro. Remove from heat and discard the lemongrass, galangal, and kaffir lime leaves.
