Method

Preparing the Fish

1

Clean the Snapper

Rinse the whole red snapper under cold water and pat dry with paper towels. Make sure to remove any scales and internal organs.

2

Season the Snapper

Rub the fish inside and out with salt and black pepper evenly. Allow it to marinate for about 15 minutes.

3

Coat the Snapper

Dredge the marinated snapper in all-purpose flour, ensuring it is fully coated. Shake off any excess flour.

Frying the Fish

4

Heat the Oil

In a large frying pan or deep fryer, heat the vegetable oil over medium-high heat until hot (about 350°F or 175°C).

5

Fry the Snapper

Carefully lower the coated snapper into the hot oil. Fry for about 6-8 minutes on each side or until the skin is crispy and golden brown. Remove from oil and drain on paper towels.

Making the Sauce and Veggies

6

Prepare the Sauce

In a small bowl, mix together the red chili paste, soy sauce, sugar, and lime juice until well combined.

7

Sauté the Vegetables

In a separate pan, heat a small amount of oil and sauté the sliced onion, bell pepper, and fresh red chilies until they are slightly softened, about 3-4 minutes.

Serving

8

Plate the Dish

Place the crispy fried snapper on a serving plate. Top with the sautéed vegetables, and drizzle the sauce over the fish. Serve immediately.
