Prepare the Rice
If you haven't done so already, cook the jasmine rice according to package instructions. Ideally, the rice should be cooked a few hours in advance or the day before and kept in the refrigerator to reduce moisture.

Cook the Eggs
In a large skillet or wok, heat 1 tablespoon of vegetable oil over medium heat. Crack the eggs into the skillet and scramble until fully cooked. Remove the eggs from the skillet and set aside.

Sauté the Vegetables
In the same skillet, add another tablespoon of vegetable oil. Add the diced onion and sauté for 2-3 minutes until translucent. Then add the diced pineapple and sauté for an additional 2 minutes.

Season the Rice
Sprinkle the curry powder, soy sauce, salt, and pepper over the rice. Stir in the scrambled eggs and toasted cashew nuts. Mix well until everything is evenly coated and heated through, about 2-3 more minutes.
