Preparation

    Soak the Noodles

    Soak the flat rice noodles in warm water for about 30 minutes or until softened. Drain and set aside.

    Prepare the Vegetables

    While the noodles are soaking, wash and cut the broccoli into small florets and julienne the carrot.

    Make the Sauce

    In a small bowl, whisk together the soy sauce, oyster sauce, dark soy sauce, and sugar until well combined. Set aside.

    Heat the Oil and Garlic

    In a large pan or wok, heat the vegetable oil over medium-high heat. Add the minced garlic and sauté for 30 seconds until fragrant.

    Cook the Vegetables

    Add the broccoli florets and julienned carrot to the pan. Stir-fry for about 2-3 minutes until the vegetables are tender-crisp.

    Add the Noodles

    Add the drained rice noodles to the pan and toss well to combine with the vegetables.

    Scramble the Eggs

    Push the noodle and vegetable mixture to one side of the pan. Crack the eggs into the empty side and scramble them until just set.

    Combine Everything

    Mix the scrambled eggs into the noodles and vegetables. Pour the sauce over the top and stir-fry everything together for an additional 2-3 minutes until heated through and well combined.
