    Prepare the Duck

    Preheat the oven to 375°F (190°C). Rinse the whole duck under cold water and pat it dry with paper towels. Trim excess fat from the cavity.

    Season the Duck

    Rub the duck all over with salt and black pepper, ensuring it gets into the cavity as well. Insert garlic cloves and fresh thyme into the duck's cavity for added flavor.

    Roast the Duck

    Place the duck on a roasting rack in a roasting pan. Drizzle olive oil over the duck. Roast in the preheated oven for about 1 hour and 30 minutes, or until the internal temperature reaches 165°F (74°C) and the skin is crispy.

    Rest the Duck

    Once cooked, remove the duck from the oven and let it rest for 15-20 minutes before carving. This allows the juices to redistribute.

    Prepare the Vegetables

    While the duck is roasting, peel and chop the carrots and potatoes into even-sized pieces for uniform cooking.

    In a large bowl, toss the chopped carrots and potatoes with olive oil, rosemary, salt, and black pepper until evenly coated.

    Roast the Vegetables

    Spread the seasoned vegetables onto a baking sheet and place them in the oven alongside the duck for the last 45 minutes of cooking. They should be golden and tender when done.
