Method

Cooking Instructions

  1. 1

    Prepare the Vegetables

Chop the onion, green pepper, mushrooms, tomato, broccoli, and spinach into bite-sized pieces.

  2. 2

    Sauté the Vegetables

In a skillet, heat a little olive oil over medium heat. Add the chopped onion and green pepper, and sauté until softened, about 3-4 minutes. Then add the mushrooms, tomato, broccoli, and spinach, cooking for an additional 5 minutes until the vegetables are tender.

  3. 3

    Whisk the Eggs

In a bowl, crack the eggs and whisk them until well beaten. Season with salt and pepper to taste.

  4. 4

    Combine and Cook

Pour the beaten eggs over the sautéed vegetables in the skillet. Cook over medium heat, gently stirring to combine until the eggs are fully cooked, about 5-7 minutes.

  5. 5

    Add Cheese

Once the eggs are cooked, sprinkle the cheese on top. Cover the skillet with a lid and let it sit for another 2-3 minutes until the cheese is melted.

  6. 6

    Serve

Remove from heat and serve hot. Enjoy your veggie-packed egg dish!
