    If using whole lobster, steam or boil the lobster until cooked through. Remove the meat from the shell and chop into bite-sized pieces. Set aside.

    In a double boiler, melt the butter. In a separate bowl, whisk together the egg yolks, lemon juice, Dijon mustard, and a pinch of salt. Slowly drizzle in the melted butter while whisking until the sauce thickens. Stir in heavy cream and paprika, adjusting seasoning as needed.
