    Prepare the Potatoes

    Peel the russet potatoes and cut them into even sticks, about 1/4 inch thick. Soak the cut potatoes in cold water for at least 30 minutes to remove excess starch, then drain and pat dry.

    Heat the Oil

    In a large heavy-bottomed pot or deep fryer, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).

    First Fry

    Carefully add the potato sticks in batches to the hot oil. Fry for about 4-5 minutes until they are soft but not browned. Remove from oil and let them drain on paper towels.

    Second Fry

    Increase the oil temperature to 375°F (190°C). Fry the potatoes again in batches for another 3-4 minutes until they are golden brown and crispy. Remove and drain on paper towels again.

    Season and Serve

    While the fries are still hot, sprinkle with salt, pepper, and paprika to taste. Serve immediately.
