    Prepare the Vegetables

    Wash and chop all the vegetables: broccoli into small florets, bell pepper into thin slices, carrot into rounds, and mushrooms into thin slices. Trim the ends off the snap peas and chop the green onions.

    Make the Sauce

    In a small bowl, mix together the soy sauce, sesame oil, minced garlic, grated ginger, cornstarch, and water until well combined.

    Heat the Oil

    In a large skillet or wok, heat the vegetable oil over medium-high heat.

    Stir-Fry the Vegetables

    Add the prepared broccoli, bell pepper, carrot, snap peas, and mushrooms to the skillet. Stir-fry for about 5-7 minutes or until the vegetables are tender-crisp.

    Add the Sauce

    Pour the prepared sauce over the stir-fried vegetables. Stir well to coat all the vegetables and cook for an additional 2-3 minutes until the sauce thickens slightly.

    Season and Serve

    Season with salt and pepper to taste. Remove from heat and serve hot, garnished with chopped green onions.
