Method

Cooking the Pasta

    Boil the Water

    Fill a large pot with water, add a pinch of salt, and bring it to a boil over high heat.

    Cook the Spaghetti

    Once the water is boiling, add the spaghetti. Cook according to package instructions until al dente, usually about 8-10 minutes.

    Reserve Pasta Water

    Before draining the pasta, reserve about 1 cup of the pasta cooking water. Then drain the spaghetti and set aside.

Making the Sauce

    Cook the Pancetta

    In a large skillet over medium heat, add the pancetta. Cook for about 5-7 minutes, stirring occasionally, until it's crispy and golden brown. Remove from heat and set aside.

    Prepare the Egg Mixture

    In a mixing bowl, whisk together the eggs, grated parmesan cheese, black pepper, and a pinch of salt until well combined.

Combining Ingredients

    Combine Pasta and Pancetta

    Add the drained spaghetti to the skillet with the pancetta. Toss to combine and allow the residual heat to warm the spaghetti.

    Add the Egg Mixture

    Quickly pour the egg and cheese mixture over the spaghetti, tossing continuously to create a creamy sauce. If the sauce is too thick, add a little reserved pasta water until the desired consistency is achieved.

    Garnish and Serve
