Shrimp Burger Preparation

Prepare the Shrimp Mixture
In a food processor, combine the shrimp, garlic, mayonnaise, lemon juice, egg, salt, and pepper. Pulse until the shrimp are finely chopped but not pureed.

Form the Patties
Transfer the shrimp mixture to a bowl, then fold in the panko breadcrumbs until combined. Form the mixture into 4 equal patties.

Fry the Patties
In a large skillet, heat the vegetable oil over medium-high heat. Once hot, add the shrimp patties and cook for about 3-4 minutes on each side or until golden brown and cooked through. Remove and drain on paper towels.

Assemble the Burger
Toast the brioche buns lightly. On the bottom half of each bun, place a lettuce leaf, followed by a cooked shrimp patty, a slice of sweet tomato, and a generous dollop of tartar sauce. Top with the other half of the bun.

Prepare the Fries
Soak the cut potatoes in cold water for at least 30 minutes to remove excess starch. Drain and pat dry with paper towels.

Season the Fries
Remove the fries from the oil and drain on paper towels. While still hot, sprinkle with salt to taste.
