Method
Herb Butter Preparation

Make the Herb Butter
In a medium bowl, combine the unsalted butter, chopped parsley, chopped thyme, minced garlic, lemon juice, salt, and black pepper. Mix well until all ingredients are fully incorporated.

Chill the Herb Butter
Transfer the herb butter mixture to a piece of plastic wrap. Roll it into a log shape, twisting the ends to seal. Refrigerate for at least 30 minutes to firm up.
Oyster Preparation

Prepare the Oysters
Preheat your oven to 375°F (190°C). On a baking sheet, arrange the shucked oysters in their shells. Make sure they are stable and not tipping over.

Add Jalapeño
Sprinkle finely chopped jalapeño evenly over the oysters to add a spicy kick.
Assembly and Baking

Top with Herb Butter
Slice the chilled herb butter into rounds and place one piece on top of each oyster.

Add Cheese Blend
Evenly distribute the shredded mozzarella, parmesan, and crumbled feta cheese over the oysters, covering the herb butter and jalapeño.

Bake the Oysters
Place the baking sheet in the preheated oven and bake for 12-15 minutes, or until the cheese is melted and bubbly and the oysters are cooked through.
Serving

Serve Hot
Remove the baked oysters from the oven and let them cool for a minute. Serve hot with lemon wedges on the side for extra zest.
