Method

For the Grilled Chicken

  1. 1

    Marinate the Chicken

In a large bowl, combine the olive oil, garlic powder, paprika, salt, black pepper, and lemon juice. Add the chicken breasts and coat them thoroughly. Cover and let marinate in the refrigerator for at least 30 minutes.

  2. 2

    Grill the Chicken

Preheat the grill to medium-high heat. Remove the chicken from the marinade and place it on the grill. Cook for about 6-7 minutes on each side, or until the internal temperature reaches 165°F (75°C). Remove from the grill and let it rest for a few minutes before slicing.

For the Seasonal Vegetables

  1. 3

    Prepare the Vegetables

Wash and slice the zucchini, bell peppers, and carrots into bite-sized pieces.

  2. 4

    Sauté the Vegetables

In a large skillet, heat the olive oil over medium heat. Add the sliced vegetables, salt, and black pepper. Sauté for about 5-7 minutes, or until the vegetables are tender but still crisp. Remove from heat.

For the Mashed Potatoes

  1. 5

    Cook the Potatoes

Peel and cut the potatoes into quarters. Place them in a large pot and cover with water. Bring to a boil and cook for about 15-20 minutes or until tender. Drain the potatoes.

  2. 6

    Mash the Potatoes

In the same pot, add the butter, milk, salt, and black pepper to the drained potatoes. Mash until smooth and creamy. Adjust seasoning to taste.
