Calamari

Spicy Marinara Sauce

Method

Calamari Preparation

  1. 1

    Prepare the Calamari

Begin by rinsing the calamari rings under cold water and patting them dry with paper towels.

  2. 2

    Set up Breading Station

In a shallow bowl, combine the all-purpose flour, cornstarch, salt, black pepper, and paprika. In another bowl, whisk together the eggs and milk until well combined.

  3. 3

    Bread the Calamari

Dip each calamari ring first into the flour mixture, then into the egg mixture, and finally back into the flour mixture. Ensure each ring is well-coated.

  4. 4

    Heat Oil

In a large, deep skillet, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).

  5. 5

    Fry the Calamari

Fry the calamari rings in batches for about 2-3 minutes or until golden brown and crispy. Remove with a slotted spoon and drain on paper towels.

Spicy Marinara Sauce Preparation

  1. 6

    Heat Olive Oil

In a saucepan over medium heat, add the olive oil and heat until shimmering.

  2. 7

    Add Garlic

Add the minced garlic to the pan and sauté for about 1 minute, or until fragrant, being careful not to burn it.

  3. 8

    Add Tomatoes and Spices

Stir in the crushed tomatoes, red pepper flakes, dried oregano, and sugar. Bring to a simmer.

  4. 9

    Simmer the Sauce

Allow the sauce to simmer for 15-20 minutes, stirring occasionally. Season with salt to taste.

  5. 10

    Finish with Basil

Stir in the chopped fresh basil just before serving.
