Preparation

    Preheat the Oven

    Preheat your oven to 425°F (220°C). Grease four ramekins with butter and set them aside.

    Melt Chocolate and Butter

    In a medium heatproof bowl, combine 170g of semisweet chocolate and 113g of unsalted butter. Place the bowl over a pot of simmering water (double boiler method) and stir until melted and smooth.

    Mix Sugar and Eggs

    In a separate bowl, whisk together 100g of granulated sugar, 2 large eggs, and 1 large egg yolk until the mixture is thick and pale.

    Combine Mixtures

    Pour the melted chocolate-butter mixture into the egg mixture. Stir gently until combined.

    Add Dry Ingredients

    Sift in 30g of all-purpose flour and add a pinch of salt. Add 1 tsp of vanilla extract. Fold gently until just combined; do not overmix.

Baking

    Fill Ramekins

    Pour the batter evenly into the prepared ramekins, filling each about 3/4 full.

    Bake

    Place the ramekins on a baking tray and bake in the preheated oven for 12-14 minutes, or until the edges are firm but the center is soft.

    Cool and Serve

    Remove from the oven and let the cakes sit for 1 minute. Invert each ramekin onto a plate and gently tap to release the cake. Serve immediately, optionally dusting with powdered sugar and adding a scoop of vanilla ice cream and fresh berries.
