Crust

Method

Crust Preparation

  1. 1

    Prepare the crust

Preheat your oven to 350°F (175°C). In a medium bowl, combine the graham cracker crumbs, granulated sugar, and melted butter. Mix until the crumbs are evenly coated with butter.

  2. 2

    Form the crust

Press the mixture firmly into the bottom of a 9-inch springform pan to create an even layer. Bake in the preheated oven for about 8-10 minutes, or until lightly golden. Remove from the oven and let it cool while you prepare the filling.

Filling Preparation

  1. 3

    Mix the filling

In a large mixing bowl, beat the softened cream cheese with an electric mixer on medium speed until smooth and creamy, about 2-3 minutes.

  2. 4

    Add sugar and sour cream

Gradually add the granulated sugar and mix until well combined. Then, add the sour cream and vanilla extract, mixing until smooth.

  3. 5

    Incorporate eggs

Add the eggs one at a time, mixing on low speed after each addition until just combined. Be careful not to overmix.

  4. 6

    Add flour

Finally, add the all-purpose flour and mix until just incorporated. Do not overbeat.

  5. 7

    Pour into crust

Pour the cheesecake filling over the cooled crust in the springform pan, smoothing the top with a spatula.

Baking

  1. 8

    Bake the cheesecake

Bake the cheesecake in the preheated oven for 50-60 minutes, or until the edges are set and the center is slightly jiggly.

  2. 9

    Cool and chill

After baking, turn off the oven and crack the door open. Let the cheesecake cool in the oven for another hour. Then, remove it from the oven and refrigerate for at least 4 hours, or overnight for best results.

Topping (optional)

  1. 10

    Prepare the topping

If desired, in a small bowl, mix the fresh berries with powdered sugar to create a delicious topping.

  2. 11

    Serve

Slice the chilled cheesecake and top with the berry mixture before serving.
