Shuck the Oysters
Carefully open each oyster using an oyster knife. Discard the top shell and place the oysters on a baking sheet with the flat side up.

Make the Herb Butter
In a bowl, combine the softened unsalted butter, minced garlic, chopped parsley, chopped chives, lemon juice, salt, and black pepper. Mix until well blended.

Prepare the Cheese Topping
In a separate bowl, mix together the grated Parmesan, grated Asiago, and shredded Mozzarella cheeses.
Baking

Assemble the Oysters
Spoon a generous amount of herb butter onto each oyster. Top with a mixture of the three cheeses.

Bake the Oysters
Preheat your oven to 400°F (200°C). Bake the oysters for 10-12 minutes, or until the cheese is melted and bubbly.

Serve
Remove from the oven and allow to cool slightly. Serve warm with lemon wedges on the side for added flavor.
