In a mixing bowl, coat the peeled and deveined shrimp with cornstarch. Dip each shrimp into the beaten egg to ensure an even coating.

Heat the vegetable oil in a deep frying pan over medium-high heat. Once hot, carefully add the shrimp in batches and fry until golden brown and crispy, about 3-4 minutes. Remove and drain on paper towels.

In a separate pan, heat a small amount of oil over medium heat. Add the minced garlic, ginger, and sliced red chili pepper. Sauté for about 1-2 minutes until fragrant.

Combine Sauce Ingredients

Add the soy sauce, rice vinegar, sugar, and sesame oil to the pan. Stir well and let it simmer for about 2-3 minutes until the sauce thickens slightly.

Add the fried shrimp to the sauce and toss until all the shrimp are well coated.

Transfer the glazed shrimp to a serving plate. Garnish with sliced green onions and toasted sesame seeds. Serve immediately with jajangmyeon.
