Method
Preparing the Fries

Cut the Potatoes
Peel the Russet potatoes and cut them into thin strips, approximately 1/4 inch thick.

Soak the Potatoes
Place the cut potatoes in a large bowl of cold water and soak for at least 30 minutes to remove excess starch.

Dry the Potatoes
Drain the water and spread the potatoes on a clean kitchen towel. Pat them dry thoroughly.

Heat the Oil
In a large pot or deep fryer, heat the vegetable oil to 325°F (160°C).

Fry the Potatoes
Carefully add a batch of potatoes to the hot oil and fry for about 3-4 minutes until they are soft but not browned. Remove and drain on paper towels.

Increase Oil Temperature
Increase the oil temperature to 375°F (190°C).

Second Fry
Return the potatoes to the hot oil in batches and fry until golden brown and crispy, about 2-3 minutes. Drain again on paper towels and sprinkle with salt.
Cooking the Steak

Season the Steak
Rub both sides of the ribeye steaks with olive oil, salt, and black pepper.

Heat a Skillet
In a large skillet, heat over medium-high heat. Add a little olive oil if needed.

Cook the Steak
Once the skillet is hot, add the steaks and sear for 4-5 minutes on each side for medium-rare, or longer depending on your desired doneness.

Add Aromatics
In the last minute of cooking, add the garlic cloves, fresh thyme, and butter to the skillet. Baste the steaks with the melted butter and aromatics.

Rest the Steak
Remove the steaks from the skillet and let them rest for about 5 minutes before slicing.
