Preparation

    Prepare the Ingredients

    Chop the bell pepper, onion, and celery into small pieces. Mince the garlic cloves. Slice the green onions for garnish.

    Cook the Sausage

    In a large pot or Dutch oven, heat 1 tablespoon of olive oil over medium heat. Add the andouille sausage and cook until browned, about 5 minutes. Remove from pot and set aside.

    Cook the Chicken

    In the same pot, add another tablespoon of olive oil. Add the boneless chicken breast and cook until no longer pink, about 6-7 minutes per side. Remove from pot, let cool, and then cut into bite-sized pieces.

    In the same pot, add the chopped bell pepper, onion, celery, and minced garlic. Sauté for about 5 minutes until the vegetables are softened.

Cooking

    Combine Ingredients

    Add the cooked sausage back into the pot along with the chicken pieces, cajun seasoning, chicken broth, and diced tomatoes. Stir to combine.

    Bring the mixture to a boil, then add the uncooked rice. Reduce heat to low, cover, and simmer for 20 minutes or until rice is cooked and liquid is absorbed.

    Add Shrimp

    After the rice is cooked, fold in the shrimp and cook for an additional 5 minutes until the shrimp are pink and cooked through.
