Preparing the Red Beans

    Soak the Beans

    Rinse the dried red kidney beans under cold water and remove any debris. Soak the beans in a large bowl with enough water to cover them by several inches for at least 8 hours or overnight.

    Sauté the Vegetables

    In a large pot, heat the olive oil over medium heat. Add the chopped onion, green bell pepper, and celery. Sauté until the vegetables are tender, about 5-7 minutes.

    Add Garlic and Sausage

    Stir in the minced garlic and sliced smoked sausage, cooking for an additional 2-3 minutes until fragrant.

    Combine Ingredients

    Drain and rinse the soaked beans. Add them to the pot along with 6 cups of water, bay leaf, thyme, cayenne pepper, salt, and black pepper. Stir well to combine.

    Slow Cook the Beans

    Bring the mixture to a boil, then reduce heat to low. Cover and simmer for 1.5 to 2 hours, or until the beans are tender. Stir occasionally and add more water if necessary to keep the beans submerged.

    Final Adjustments

    Once the beans are tender, taste and adjust seasoning if necessary. Remove the bay leaf before serving.

Preparing the Rice

    Rinse the Rice

    Rinse the long-grain white rice under cold water until the water runs clear to remove excess starch.

    Cook the Rice

    In a medium saucepan, combine the rinsed rice, 2 cups of water, and 1 teaspoon of salt. Bring to a boil over high heat.

    Simmer the Rice

    Once boiling, cover the saucepan with a lid, reduce the heat to low, and let it simmer for about 18-20 minutes, or until the rice is cooked and all the water is absorbed.

    Fluff and Serve

    Remove the saucepan from heat and let it sit for 5 minutes. Fluff the rice with a fork before serving alongside the red beans.
