Pulled Pork

Prepare the Pork
Trim excess fat from the pork shoulder and cut it into large chunks.

Season the Pork
In a bowl, mix the smoked paprika, cumin, salt, and black pepper. Rub the spice mix all over the pork pieces.

Cook the Pork
Place the pork in a slow cooker. Add the chopped onion, minced garlic, apple cider vinegar, water, and barbecue sauce. Cover and cook on low for 8 hours or until the pork is tender and easily shredded.

Shred the Pork
Once cooked, remove the pork from the slow cooker and shred it using two forks. Return the shredded pork to the cooker and mix it with the juices.

Prepare the Vegetables
Finely shred the green cabbage and grate the carrots.

Make the Dressing
In a large bowl, whisk together the mayonnaise, apple cider vinegar, sugar, salt, and black pepper until smooth.

Combine the Slaw
Add the shredded cabbage and carrots to the dressing. Toss well to ensure the vegetables are coated. Refrigerate for at least 30 minutes before serving.

On a serving plate, place a generous portion of pulled pork. Top with a scoop of slaw and sprinkle with shredded cheddar cheese.
