Prepare the Pineapple
Cut the fresh pineapple into small chunks, measuring 1 cup. You can also use canned pineapple if fresh is not available, but make sure to drain it well.

Muddle the Ingredients
In a sturdy glass or cocktail shaker, add the pineapple chunks, fresh mint leaves, lime juice, and granulated sugar. Use a muddler or the back of a spoon to gently crush the ingredients together, releasing the juices and flavors.

Add Rum
Pour the white rum into the muddled mixture and stir gently to combine all the flavors.

Add Ice
Fill the glass with ice cubes to the top.

Garnish and Serve
Garnish your Pineapple Mojito with additional mint leaves and a slice of pineapple on the rim of the glass. Serve immediately with a straw.
