    Prepare the Ingredients

    Dice the bell peppers, onion, and celery. Mince the garlic and chop the parsley. Peel and devein the shrimp if not done already.

    Slice the Sausage

    Slice the Cajun sausage into bite-sized pieces and set aside.

    Cut the Chicken

    Cut the boneless chicken thighs into cubes for even cooking.

    Sauté the Vegetables

    In a large pot, heat the olive oil over medium heat. Add the diced bell peppers, onion, and celery. Sauté for about 5 minutes until softened.

    Cook the Sausage and Chicken

    Add the sliced Cajun sausage and cubed chicken thighs to the pot. Cook for about 7-10 minutes, stirring frequently until the chicken is browned.

    Add Garlic and Spices

    Stir in the minced garlic, Cajun seasoning, salt, black pepper, and red pepper flakes. Cook for an additional 2 minutes until fragrant.

    Combine Remaining Ingredients

    Add the canned diced tomatoes (with juice), chicken broth, and bay leaves to the pot. Stir to combine.

    Simmer

    Bring to a boil, then reduce heat to low. Cover and simmer for 20-30 minutes, allowing the flavors to meld.

    Add Shrimp

    Add the shrimp to the pot and cook for an additional 5 minutes until shrimp are pink and fully cooked. Remove bay leaves.

    Finish with Parsley

    Stir in the chopped parsley before serving.

Serving

    Spoon the mixture over cooked rice in large bowls.

    Garnish with sliced green onions and offer hot sauce on the side for those who like it spicy.
