Slice the Sausage
Slice the Cajun sausage into bite-sized pieces and set aside.

Cut the Chicken
Cut the boneless chicken thighs into cubes for even cooking.

Cook the Sausage and Chicken
Add the sliced Cajun sausage and cubed chicken thighs to the pot. Cook for about 7-10 minutes, stirring frequently until the chicken is browned.

Add Garlic and Spices
Stir in the minced garlic, Cajun seasoning, salt, black pepper, and red pepper flakes. Cook for an additional 2 minutes until fragrant.

Combine Remaining Ingredients
Add the canned diced tomatoes (with juice), chicken broth, and bay leaves to the pot. Stir to combine.

Bring to a boil, then reduce heat to low. Cover and simmer for 20-30 minutes, allowing the flavors to meld.

Add Shrimp
Add the shrimp to the pot and cook for an additional 5 minutes until shrimp are pink and fully cooked. Remove bay leaves.
