Preparation

    Prepare the Ingredients

    Dice the chicken thighs, slice the sausages, and chop the vegetables (onion, bell pepper, celery, garlic). Set aside.

    Cook the Meats

    In a large pot or Dutch oven, heat 2 tablespoons of olive oil over medium heat. Add the andouille and smoked sausages and cook for about 5-7 minutes until browned. Remove the sausages and set aside.

    Cook the Chicken

    In the same pot, add the diced chicken thighs and cook until browned, about 5-7 minutes. Remove and set aside with the sausage.

    Sauté Vegetables

    In the same pot, add the diced onion, bell pepper, and celery. Sauté for about 5 minutes until softened. Add minced garlic and cook for an additional minute.

    Combine Ingredients

    Return the cooked sausages and chicken to the pot. Add the canned diced tomatoes (with juices), Cajun seasoning, bay leaves, salt, black pepper, thyme, and red pepper flakes. Stir well.

    Add Rice

    Pour in the long-grain rice and chicken broth. Stir to combine all ingredients.

    Simmer

    Bring the mixture to a boil, then reduce the heat to low. Cover the pot and let it simmer for about 20-25 minutes, or until the rice is cooked and has absorbed most of the liquid.

    Add Shrimp

    Five minutes before the cooking time is up, stir in the shrimp, cover, and let them cook until pink and opaque.

    Garnish and Serve

    Remove the pot from heat. Discard bay leaves and garnish with sliced green onions. Serve hot and enjoy!
