Cooking Pasta

    Boil the Pasta

    In a large pot, bring water to a boil. Add the pasta shells and cook according to package instructions until al dente. Drain and set aside.

Sautéing Crawfish

    Prepare the Crawfish

    In a skillet, heat the olive oil over medium heat. Add minced garlic and sauté for about 1 minute until fragrant. Add the crawfish tails and chopped green onions. Cook for 3-4 minutes until the crawfish are heated through. Remove from heat and set aside.

Making Cheese Sauce

    Prepare the Cheese Sauce

    In a saucepan, melt the butter over medium heat. Stir in the flour and cook for 1-2 minutes to form a roux. Gradually whisk in the milk, ensuring there are no lumps. Continue cooking until the sauce thickens, about 5-7 minutes.

    Add the Cheeses

    Once the sauce is thickened, lower the heat and slowly add the cheddar and pepper jack cheeses. Stir until the cheeses are melted and the sauce is smooth. Season with salt and black pepper.

Combining Ingredients

    Mix Everything Together

    In a large mixing bowl, combine the cooked pasta shells, crawfish mixture, and cheese sauce. Stir until everything is evenly coated.

Baking

    Bake the Dish

    Pour the mac and cheese mixture into a baking dish. Sprinkle grated Parmesan cheese on top and dust with 'P-Nut's Cajun Dust' to taste. Bake in a preheated oven at 350°F (175°C) for 20-25 minutes or until the top is golden and bubbly.
